Spud Sunday: The Late Edition

The astute among you will have observed that this week’s Spud Sunday is suffering from a mild bout of tardiness. If this were school, I’d have a note from my parents to say that it was their 60th wedding anniversary celebrations that had me otherwise engaged this weekend. Either that or I would be trying to convince someone in authority that the dog had eaten my blog post. Sure by the time I got to it, all that remained were these few potato crumbs, your honour.

Spud Sunday: Let There Be Colcannon

Colcannon

Ah lovely, colcannon à la Spud

I was thinking about colcannon lately. As you do.

To be honest, it’s been on my mind ever since I heard my niece express the following fond and particularly Irish hope a few weeks back: “I hope my Ma makes colcannon”.

And it occurred to me that I do not make colcannon half often enough. Mashed potatoes, cabbage or kale, butter, milk and maybe some scallions – it’s supremely comforting food.

Of course I know that kale is the more traditional addition to colcannon, but childhood experience has led me to regard it as cabbage’s tougher and frankly less appealing cousin. It has not, therefore, been a vegetable that I have sought out but one that I feel I have to deal with whenever it is foisted upon me.

Don’t Cry For Me

Argentina.

That’s where I was supposed to be today.

Wining, dining and (as it happens) celebrating my birthday.

However, next door in Chile, which was also on the list of places to visit, they have serious earthquake-type things to contend with, so it really was for the best that I steer clear of the region.

Rather than coming over all blue – tempting though that was – I thought that I would, instead, apply the colour green to the situation. St. Patrick’s Day will be upon us very soon and I fully expect the blogosphere to take on an increasingly pronounced Irish accent in the next couple of weeks. So, if you’re food blogging something with Paddy’s Day in mind, why not join me for a little Paddy’s Day Food Parade on the 17th.
