Potato galette: the 'tayto' part of the deal
Is it a bird? Is it a plane? No, it’s TaytoRiCo.
Potatoes, rice, coconut and a late night conversation on twitter, ideas zipping between Jenni of Pastry Methods and Techniques in North Carolina, Tracey of Tangled Noodle in Manila and my good self in Dublin. With a tip of the hat to each of our food loves, we concocted the idea of making a dish with spuds for me, rice and coconut for Tracey and (could it be done?) something sweet and pastry-like for Jenni. Thus #TaytoRiCo was born.
So how did a little baked something, trading under the name Macadamia Anzacs, come into being? I don’t mean the recipe, but the events leading up to this particular baking episode. You know, where some huddle of neurons got all fired up and eventually took earthly form in the shape of baked goodies. Well, it happened something like this…
A dinner can be many things.
Clearly it fills a functional need because we must eat to live and sometimes (maybe too often) that’s more or less all dinner gets to be. Too many people seem to lead busy, busy lives that don’t create a space for what we know dinner can and should be…
- It can be a family or community ritual.
- It can be a special occasion, celebratory thing.
- It can be a manifestation of our cultural identity (as discussed in Tangled Noodle’s thoughtful posts on ethnicity and food identity, which you can read here).
And it can be a way of saying things without words.
