Egg baked potatoes, a simple variation on the twice-baked potato thing. Just add an egg to your baked potato shell, give it a spell in the oven et voilà.

Spud Sunday: Sippity Spuds
My recent travels to San Francisco resulted in the happy circumstance of being able to meet with Greg from Sippity Sup. He introduced me to banh mi and I, in turn, was delighted to create a baked potato with banh mi flavours.
